Peel and core apples. Chop into ½″ chunks or ¼" slices. After each apple chopped, place it in a large bowl and drizzle the pieces with lemon juice to prevent browning.
4 cups chopped apples, 1 tablespoon lemon juice
Mix cornstarch with 3 tablespoons of water.
3 tablespoons cornstarch, 2 tablespoons water
Melt butter in a deep pot. I used 3-quart Dutch oven.
1 tablespoon unsalted butter
Add sugars, spices, water and cornstarch mix. Whisk well.
½ cup packed brown sugar, ½ cup granulated sugar, 1 ¼ cup water, 1 teaspoon ground cinnamon, ⅛ teaspoon ground cloves
Add apples and bring the mixture to a boil over medium heat. Stir often.
Lower the heat and simmer until the apples are softer and the mixture thickens. Stir often.
Cool completely.
Notes
Use 4 medium or 6 small apples.
This recipe makes enough filling for one 9" pie.
