Apple Pie Filling

  • 4 cups chopped apples see notes
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 1/4 cup water
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 3 tablespoons cornstarch
  • 2 tablespoons water


  1. Peel and core apples. Chop into 1/2″ chunks or 1/4" slices. After each apple chopped, place it in a large bowl and drizzle the pieces with lemon juice to prevent browning.
  2. Mix cornstarch with 3 tablespoons of water.
  3. Melt butter in a deep pot. I used 3-quart Dutch oven.
  4. Add sugars, spices, water and cornstarch mix. Whisk well.
  5. Add apples and bring the mixture to a boil over medium heat. Stir often.
  6. Lower the heat and simmer until the apples are softer and the mixture thickens. Stir often.
  7. Cool completely.

Recipe Notes

  • Use 4 medium or 6 small apples.
  • This recipe makes enough filling for one 9" pie.
