Baked Acorn Squash

Ingredients

  • 1 acorn squash mine was almost 3 lb
  • 1/3 cup butter melted
  • 2 tablespoons packed brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with parchment paper or silicone baking mat.
  3. Cut off both ends from acorn squash.
  4. Cut the squash in half.
  5. Place each half cut-side down on a cutting board. Cut into slices, about 3/4" thick.
  6. Arrange acorn squash slices on a prepared baking sheet.
  7. In a small bowl, whisk melted butter with brown sugar, salt, pepper, cinnamon and cloves.
  8. Brush each squash slice with butter mixture on both sides.
  9. Roast in the oven for 15 minutes, flip each slice and bake for 5 more minutes.
  10. Serve.
