Old-Fashioned Apple Crisp

Sweet, cinnamon-spiced apple filling with crunchy brown sugar and oat topping. This crisp is best served with caramel ice cream!

for the apple filling:

  • 4 cups chopped or sliced apples Granny Smith or Golden Delicious
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon

for the topping:

  • 3/4 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 cup unsalted butter melted and cooled
  • 1/2 teaspoon salt


  • Butter a 2qt or 8" square or round baking dish.
  • Preheat oven to 375 degrees F.
  • In a large mixing bowl, combine apple slices with lemon juice. Toss gently.
  • Add cornstarch and toss gently again.
  • Add granulated sugar and cinnamon and stir in.
  • Spread the filling in prepared dish.
  • In the same large bowl, whisk oats and flour.
  • Add brown sugar, cinnamon and cloves and stir in.
  • Melt butter in microwave. Let it sit in room temperature for 10 to 15 minutes to cool. It will not solidify.
  • Pour butter over oats topping. Mix with a fork.
  • Sprinkle topping in crumbles over apple filling.
  • Cover the baking dish with aluminum foil and bake for 15 minutes.
  • Remove the foil and bake for 10 to 15 minutes more.
  • Serve warm with ice cream.


The most recommended are firmer apples because they don't fall apart into mush during baking. I used a mix of Golden Delicious and Granny Smith. If you are using softer apples, cut down the baking time by 1/3.
