Ingredients

  • 2 shallots
  • 2 teaspoons minced garlic
  • 2 lb carrots
  • 2 tablespoons butter divided
  • 1 tablespoon olive oil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon coriander
  • 1/8 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 5 cups vegetable stock
  • 1/4 cup heavy cream

Instructions

  1. Peel and chop carrots. Finely chop shallots.
  2. Heat up oil in soup pot. Add one tablespoon of butter and melt.
  3. Add shallots and saute for 2 minutes. Add carrots and garlic and stir in.
  4. Add seasoning, stir well, and saute for 5 minutes.
  5. Add vegetable stock and bring to boil.
  6. Cook until carrots are soft.
  7. Using an immersion blender, blend soup until creamy. Add salt, pepper and stir in.
  8. Add heavy cream and stir in. Add the remaining tablespoon of butter and let it melt. Stir in.

  9. Serve soup with chopped parsley, croutons, etc.
