Start by peeling and chopping the potatoes. I cut them into about ¾" cubes.
Set your air fryer to 390 degrees F and let preheat for 4 minutes.
In a large mixing bowl, toss chopped potatoes with one tablespoon of olive oil, salt, pepper and Italian seasoning. Place in one layer in your air fryer.
Place basket in the air fryer and roast potatoes for 15 minutes, stopping halfway to shake them.

I used Russet potatoes, but yellow or even red potatoes can be used as well.
