  • 1 large cucumber
  • 1/3 cup Greek yogurt or sour cream
  • 1 teaspoon minced garlic
  • 1.5 teaspoons dry Ranch dressing mix
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt to taste


  1. Spiralize cucumber. Place in a medium bowl.
  2. In a small bowl, whisk together yogurt/sour cream, garlic, Ranch mix, pepper and salt. Mix well together. Pour over cucumber spirals.
  3. Toss gently to coat.
  4. Cover and chill until ready to serve.
  5. Refrigerate leftovers for up to 2 days.
