These Raspberry Jam Streusel Bars are made of buttery crust, sweet and tart raspberry jam filling, and crunchy streusel topping. This quick and easy dessert makes for a great last-minute dessert!

Preheat oven to 375° F. Line 8" square baking pan with parchment paper and set aside.
In a microwave-safe bowl, melt butter. Set it on the counter and let it cool to room temperature. It cannot be hot but it should not set back either. Check on it every few minutes.
½ cup unsalted butter
Measure out remaining ingredients.
Pour cooled butter into a mixing bowl and add sugar. Whisk for 1 minute. Let it sit for a minute, then mix again. Refer to my photos to see what it's supposed to look like.
½ cup granulated sugar
Add salt, baking powder, soda, and flour. Stir with a fork. The mixture should be dry and resemble coarse crumbs.

Reserve 1 cup of the crumbs mixture for the topping. Pour the rest into prepared pan.
Press the dough into the bottom of the pan with a fork or bottom of a cup.
Spread the jam over crust.

Sprinkle the topping mixture over jam. Sprinkle sliced almonds on top.

Bake the bars in preheated oven for 23 to 25 minutes. For me, the magic number was 24 minutes.
Remove from oven and let cool in pan for 10 minutes. Remove bars with parchment paper onto a cutting board. Let them cool until warm but not hot.
Cut into 9 squares and serve.
Notes
Remember to fluff the flour in its container, then spoon into a measuring cup. Level off the top with a knife.
If your jam is very thick, heat it up in the microwave for 15 seconds or so to "melt" it a little bit to make spreading easier.
When cutting, keep in mind that the jam layer is sticky. For clean slices, wipe the knife in between cutting.
