Ingredients

chicken:

  • 3 boneless skinless chicken breasts
  • 3/4 teaspoon salt
  • 3 teaspoons lemon pepper seasoning recipe below
  • 1/4 cup all-purpose flour
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter divided

sauce:

  • 3 tablespoons lemon juice
  • 1/4 cup white wine or chicken stock see note
  • 1/2 teaspoon minced garlic optional
  • lemon slices optional

lemon pepper seasoning:

  • 1 tablespoon freshly cracked black pepper
  • 2 tablespoons dried lemon zest See note
  • 1.5 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Prepare the seasoning: mix all ingredients in a small bowl.
  2. Preheat oven to 375 degrees F.
  3. Salt each chicken breast, then sprinkle 1 teaspoon of lemon pepper seasoning per each breast and rub it in.
  4. Lightly dredge each piece in flour.
  5. Heat up oil and butter in a skillet.
  6. Brown chicken for 4 minutes on each side, until nice and golden.
  7. Place chicken in a casserole dish.
  8. Add garlic to skillet and saute for 1 minute, until fragrant. Add wine (or stock) and lemon juice. Simmer for about 4 minutes. Add butter and melt. Pour the sauce over chicken. Add lemon slices.
  9. Bake chicken in the oven for 20 to 25 minutes OR until the temperature reaches 165 degrees F when checked in the thickest part of each breast.
  10. Serve.
