These Corn Fritters are made with fresh corn, cornmeal, cheddar, green bell pepper and fried until golden. This easy appetizer is the best way to enjoy corn this season!
In a large mixing bowl, whisk dry ingredients together: cornmeal, flour, baking powder, salt and pepper.
¾ cup all-purpose flour, ¼ cup yellow cornmeal, ½ teaspoon baking powder, ½ teaspoon salt, ¼ teaspoon black pepper
Add corn and toss with dry ingredients.

Add onion, garlic and pepper. Mix in.
2 teaspoons minced garlic, ½ cup chopped yellow onion, ½ cup chopped green bell pepper
In a small bowl or a glass measuring cup, whisk wet ingredients together (half and half and egg).
¼ cup half and half, 1 large egg
Add cheese and wet ingredients to corn mixture. Mix well.
½ cup shredded cheddar cheese
Heat up oil in a large skillet, over medium heat.

Pour ¼ cup of corn mixture into a pan and fry for 2 to 3 minutes per side or until golden brown.
Serve with Ranch dip or sour cream.
Notes
For the best texture and flavor use fresh corn off the cobs; you can also use frozen corn but it needs to be thawed and patted dry (as best as possible). If you want to use canned corn, go for whole kernel corn, drain it, rinse and pat dry.
If the mixture seems too dry after mixing all ingredients, add a tablespoon or more of the half and half; you can also use whole milk
