Best noodles for this dish: Chinese egg noodles, yakisoba, chow mein or Ramen noodles. You can buy them cooked already.
You can use any stir fry veggies you like: broccoli, bok choy, baby corn, water chestnuts, snap peas, edamame beans, etc.
