  • 2 lbs fresh green beans
  • 2 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon fresh thyme
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  1. Preheat oven to 420 degrees F.
  2. Wash green beans. Trim ends and discard.
  3. Place green beans in a large bowl. Add olive oil and garlic. Toss to coat.
  4. Add Italian seasoning, thyme, oregano, salt and pepper. Toss to coat.
  5. Arrange beans on parchment paper-lined large baking sheet, in a single layer. Use two sheets if needed.
  6. Make sure the garlic is on top of the beans and not at the bottom of the pan (it can burn).
  7. Roast beans for 18 to 22 minutes, flipping once at 15-minute mark.
  8. Serve.
