Dorito Taco Salad

for salad:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/3 cup water
  • 4 cups chopped Romaine lettuce
  • 1 15 oz. can black beans rinsed and drained
  • 1 cup chopped tomatoes
  • 1/4 cup chopped red onion
  • 1 cup shredded cheddar cheese
  • 2 cups broken up Dorito chips

for dressing:

  • 1/2 cup sour cream
  • 1/4 c favorite salsa
  • 1/4 teaspoon ground cumin

  1. In a large skillet, cook meat, breaking it up with a spatula. Cook until no longer pink. Add seasoning, stir and cook for 1 minute. Add water, stir and simmer for 2 minutes. Remove from heat and cool for 5 minutes.
  2. In a large salad bowl, combine chopped lettuce, tomatoes, onion, cheese, black beans and seasoned beef. Add Doritos.
  3. In a small mixing bowl, whisk together sour cream, salsa and cumin. Add to salad and toss gently.
  4. Serve immediately.

Recipe Notes

To make ahead: store lettuce, tomatoes, onion and cheese in a bowl. Separately, store cooked meat with beans. Store dressing separately too. Combine all before serving. To lighten up: add avocados; ground turkey or skip meat for a vegetarian version.
