Microwave Caramel Sauce

Ingredients

  • 1 cup granulated sugar
  • 2 Tablespoons water tap is fine
  • 2 Tablespoons corn syrup clear, not golden
  • 1 teaspoons pure vanilla extract
  • 2 Tablespoons unsalted butter room temperature
  • 1/4 cup plus 1 teaspoon half and half room temperature

Instructions

  1. Get ingredients ready: set butter and measured half and half on a cutting board on a counter. Have a kitchen towel or oven mitt ready.
  2. In a microwave safe measuring cup or bowl, mix together sugar, water and corn syrup. (See note)
  3. Place in microwave set on high and cook for 2 minutes.
  4. Stir the mixture once.
  5. Cook again in 20 second increments (about 4 or 5 rounduntil the mixture turns golden. It will be bubbly.
  6. Give the mixture one stir.
  7. Cook the mixture for 10 to 15 more seconds, watching constantly, until the color depends slightly.
  8. Remove the cup from the microwave and set on the prepared cutting board.
  9. Stir the caramel frequently to help it cool down.
  10. After 5 minutes, add the half and half one tablespoons at a time. Be careful! The mixture will foam up when you add the half and half. Stir until each addition is combined. Repeat until all half and half is added and mixed in.
  11. Add vanilla and butter and stir until smooth.
  12. At this point you can add sea salt for a salted version of the caramel.
  13. Let the caramel sauce sit in room temperature until cooled completely.
  14. Transfer into a jar with lid.
  15. Store in fridge for up to 2 weeks.
  16. Warm up in the microwave for 20 seconds if too thick after refrigerating.
