Ingredients

  • 1 tablespoon olive oil
  • 1 and 1/2 pounds skinless bone-less chicken breast cut into bite size pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup cashews
  • 1/2 cup edamame beans
  • 1 medium red bell pepper chopped
  • 1/4 cup honey
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons rice vinegar or apple cider vinegar or lemon juice
  • 2 cloves garlic minced
  • 2 tablespoons sweet chili sauce
  • 1/2 tsp ground ginger
  • 1 tablespoon cornstarch
  • 2 and 1/2 cups broccoli steamed

Instructions

  1. Heat up oil in a saucepan. Add chicken and season with salt and pepper. Cook until done. 

  2. In a measuring cup or small mixing bowl, whisk together honey, soy sauce, vinegar, minced garlic, chili sauce, ginger and cornstarch. Set aside.

  3. Add chopped pepper and cashews to chicken. Cook 2 to 3 minutes. Add edamame beans. Stir. 

  4. Add sauce to chicken and cook until the sauce thickens, about 3 to 4 minutes. Remove from heat. 

  5. Serve cashew chicken with steamed broccoli.

Recipe Notes

Notes:

I tested this recipe with lemon juice and apple cider vinegar and both work great. Use what you have on hand. 

You can skip edamame beans or sub with a vegetable of choice.
