  • 5 to 6 medium russet potatoes scrubbed clean
  • 5 to 6 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

  1. Prepare 5 to 6 (one for each potato) square pieces of aluminum foil, large enough to wrap potatoes tightly. 

  2. Lay potato on a piece of foil. Drizzle with 1 tablespoon of olive oil. Sprinkle with about 1/4 teaspoon of each salt and pepper. 
  3. Wrap foil tightly around potato. Place in slow cooker. Repeat with remaining potatoes. 

  4. Add 1/2 cup of water to slow cooker. Set on LOW to cook for 7 to 8 hours or on HIGH to cook for 4 to 5 hours. 

  5. When done, remove potatoes from slow cooker using kitchen tongs. Place on plate. Unwrap, slice lengthwise with a knife, fluff with fork and top with your favorite toppings: butter, more seasoning, sour cream, dill, parsley, bacon, cheese.
