  • 3 medium zucchinis
  • 2 Tablespoons unsalted butter
  • 2 cloves garlic minced
  • 4 oz white mushrooms washed and sliced
  • 1/2 Tablespoon all-purpose flour
  • 1 cup Greek yogurt
  • 1/2 cup milk
  • salt and pepper to taste


  1. Wash the zucchini. Slice lengthwise into thin (but not translucenslices.
  2. Place zucchini in a medium saucepan and cover with water. Cook until tender, about 10 minutes.
  3. Drain and set aside.
  4. In a large measuring cup, mix together Greek yogurt and milk.
  5. In a medium saucepan or medium pan, melt butter over medium heat.
  6. Add garlic and cook for 1 minutes, stirring often.
  7. Add mushrooms and cook until soft, about 3 minutes.
  8. Sprinkle flour over the mushrooms and cook for 1 minutes, stirring often.
  9. Take the pan off the heat.
  10. Stir in yogurt mixture.
  11. Serve over zucchini noodles.
