Pumpkin Chocolate Chip Bread

The best and easy pumpkin bread with a perfect balance of spices and chocolate chips through out. Made with Greek yogurt, this bread bakes up perfectly moist every time!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup 100% pumpkin puree not pumpkin pie filling!
  • 1/4 cup oil (canola vegetable or coconut)
  • 1/4 cup plain or Greek yogurt you can also use sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3/4 cup packed light brown sugar
  • 2.5 teaspoon pumpkin pie spice
  • 1.25 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F.
  2. Lightly grease and flour a 9" by 5" loaf pan. Set aside.
  3. In a large mixing bowl, whisk together the dry ingredients (flour, baking soda, baking powder, salt and pumpkin spice).
  4. Add chocolate chips and stir in until coated.
  5. In another mixing bowl, mix together the wet ingredients (pumpkin puree, oil, yogurt, vanilla and eggs). Add sugar and mix well.
  6. Stir in the wet ingredients into the dry ingredients. Mix only until combined. Do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake the bread for 45 to 50 minutes or until the toothpick inserted in the center of the bread comes out clean and the top is golden brown.
  9. Cool the bread in the pan to room temperature. Place on a cutting board, slice and serve.

Recipe Notes

To freeze: wrap tightly in plastic wrap, place in a ziploc bag and freeze for up to 3 months.
