Ingredients

  • 3 cup all-purpose flour
  • 2 tsp granulated sugar
  • 1.5 tsp salt
  • 1/4 tsp baking soda
  • 1 Tbsp Red Star Yeast Platinum or instant yeast
  • 1 cup milk
  • 1/4 cup water
  • 2 Tbsp vegetable or canola oil
  • cornmeal for sprinkling

Instructions

  1. Grease and dust with cornmeal a 8"x4" loaf pan or 2qt baking dish (I used French oven). Set aside.
  2. In a large mixing bowl of a stand mixer, whisk together the dry ingredients (flour, sugar, salt, yeast, soda).
  3. In a medium saucepan, combine milk, water and oil. Heat up to 130 degrees It should be really warm but not too hot to the touch.
  4. With the mixer on low speed, slowly drizzle the wet ingredients to the dry ingredients.
  5. Knead the dough for about a minute, or until it start to pull away from the sides of the bowl.
  6. Scoop the dough out into the prepared pan. Cover and place in a warm and draft-free place. See note.
  7. When dough has doubled in size, preheat the oven to 400 degrees F.
  8. Bake the bread uncovered for 20 to 25 minutes (the magic number for me was 22 minutes), until the top is golden brown.

  9. Let sit in the pan for 5 minutes, then turn onto a cooling rack to cool completely.
