Ingredients

  • 3 lbs red potatoes
  • 1/4 cup olive oil
  • 2 Tablespoons lemon juice
  • 1 Tablespoon minced garlic
  • 1 teaspoon salt
  • 1/3 teaspoon black pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. Spray a large baking sheet with a non-stick cooking spray. Set aside.
  3. Scrub the potatoes clean and cut into large chunks. Place into a large mixing bowl.
  4. In a measuring cup, whisk together oil, lemon juice, salt, pepper and garlic. Pour the mixture over the potatoes and toss to coat.
  5. Spread the potatoes in a single layer on the prepared baking sheet. Use two sheets if needed.
  6. Roast potatoes for 50 to 55 minutes, flipping them half way through baking.
