Skillet Salsa and Cheddar Chicken

salsa

freshly grated sharp cheddar cheese

Instructions
Preheat oven to 400 degrees F.
Add oil to 10" oven-safe skillet. Set over medium heat.
Add chicken to hot pan and brown, about 2 minutes per side.
Spread salsa evenly on both chicken breasts.
Place skillet in the oven and bake for 15 minutes or until the temperature of chicken reaches 160 degrees.
Set your oven to broil.
Top chicken with cheese and place under broiler for 2 minutes.
Remove from oven, cool 10 minutes.
Garnish chicken with chopped parsley and serve.
