Ingredients

cauliflower rice

Tablespoons
olive oil

large egg
beaten
1
medium red onion
chopped

cloves
of garlic
minced or grated
1
medium carrot OR 8 baby carrots
chopped

green peas

soy sauce
green onions

Instructions
Heat up 1 tablespoon of oil in a large pan.
Add egg and cook, gently stirring, until done.
Remove onto a plate and break into smaller pieces.
To pan, add 1 tablespoon of oil, heat up.
Add onion and garlic and saute for about 3 minutes.
Add chopped carrots and cook for 2 more minutes, stirring often.
Add cauliflower rice and cook about 5 minutes, until cooked.
Add soy sauce and egg, stir in and cook for 1 more minute.
Remove from heat and season to taste.
Serve garnished with chopped green onions.
