Easy salads with fresh ingredients are my favorite for healthy lunch. If I don’t have a bowl of my Black Bean Taco Salad or my Avocado Egg Salad, I reach for tuna and make this salad. It is my favorite lately. It’s healthy and quick to make. I serve it with whole grain bread for sandwiches or in tortillas for wraps. Who knew avocados and tuna go so well together? Celery and red onion add flavor and crunch, while cucumber adds a pop of fresh flavor. Besides the two main ingredients, you can customize others by choosing what you like.
