Raise your hand if you feel like your chicken dinners are boring. Yep, me too! I have my favorite ones that are in rotation on a weekly basis but you can get bored even with your favorites. Sometimes you just need to jazz things up a little. What better way than with spicy salsa and cheddar cheese. I am in!
A few weeks ago, I received a copy of the new and already highly popular cookbook written by Julie from Table for Two blog. I’ve known Julie’s blog for a couple of years now and everything she makes and shares on her blog always looks so tempting and delicious. I had a feeling that her book will be the same. After just few page turns, I had a handful of recipes bookmarked. This Skillet Salsa Cheddar Chicken was one of the first. It has everything I love (chicken, salsa and cheese!!) and is so easy, I had to try it. There are days when my Hubby and I want something spicy but we know the kids won’t like it. This recipe (and the whole book for that matter) is perfect for those days. I can make our kids their favorite meal and my Hubby and I can whip up something new for us.
Julie’s book is called “Dinner for Two” and it’s filled with easy dinner ideas perfect for couples but they are also easy to double up to feed a family. I find most of the recipe in this book pure comfort food, and a lot of them are healthy. Each recipe is accompanied by a photo, which is something I always love about cookbooks. The mix of recipes is fantastic! Dinner ideas from skillet to slow cookers, breakfasts for dinner, salads and soups – this book has everything. Cooking at home made easy – that’s for sure! What I love about this dish is how easy it is yet full of flavor. Besides, cheese. I can never resist a gooey layer of cheddar on my dinner. All you need is 4 ingredients and less than 30 minutes to make it. Add a side of a salad or steamed veggies and you are good to go!
Easy chicken dinner idea: baked chicken with salsa and cheddar cheese.
- 1.5 teaspoons vegetable oil
- 2 large boneless skinless chicken breasts
- 1/2 cup salsa any kind
- 1/2 cup freshly grated sharp cheddar cheese
- 2 Tablespoons fresh parsley chopped (optional)
- Preheat oven to 400 degrees F.
- Add oil to 10" oven-safe skillet. Set over medium heat.
- Add chicken to hot pan and brown, about 2 minutes per side.
- Spread salsa evenly on both chicken breasts.
- Place skillet in the oven and bake for 15 minutes or until the temperature of chicken reaches 160 degrees.
- Set your oven to broil.
- Top chicken with cheese and place under broiler for 2 minutes.
- Remove from oven, cool 10 minutes.
- Garnish chicken with chopped parsley and serve.
