    PEANUT BUTTER CHOCOLATE OATMEAL BARS

    We are talking oatmeal, semi-sweet chocolate and peanut butter. All of them good for you. Then we wrap it in an easy to make cookie bar dough. I replace some of the butter with peanut butter. Half of the flour is replaced with oats. These Oatmeal Bars are gooey in the middle and have crispy edges. They are packed with chocolate that goes perfectly with the salty peanut butter.

    I could eat cheesecake desserts everyday. It's one of our very favorite treats!

    Now add caramel swirl into the cheesecake and set it all atop a chocolate chip cookie dough - one amazing treat!!!

    These bars are made gluten free. I was asked by Pillsbury to try their gluten-free line of products and use it in my recipes. I went with the chocolate chip cookie dough and created these outrageously good bars!

    My Husband's favorite cookies (aside from chocolate chip) are Snickerdoodles. Probably because he also loves sugar cookies. The cinnamon sugar coating of Snickerdoodles is his favorite part. But he is not a fan of gingerbread! He doesn't like the smell or the taste of it.

    Yet I decided to make Gingerbread Snickerdoodles. Just a little makeover of the classic. Maybe just my attempt to show him that gingerbread is delicious? 🙂 Especially deceivingly dressed up as his favorite cookie. 🙂

    I am so excited to finally share this recipe on the blog! It is a family recipe and a dessert we always look forward to during holidays. It's super easy to make, requires no baking (although I did bake the crust to set it even more) and looks so festive! My Husband's Grandmother used to make this dessert for holidays. I never had a chance to meet her but I always think of her when this treat appears on the holiday table. My brother-in-law took over the tradition of making the Cherry Delight.

    APPLE BUNDT CAKE

    We all know bundt cakes are beautiful. I love this cake. It has a perfect amount of apples and spices in every slice. The caramel glaze is super simple and makes for a delicious finishing touch for this showstopper. I used pecans as a topping. When it comes to holiday desserts, little things like that matter. Toast the pecans for few minutes, chop and sprinkle over the almost set glaze. You can add them to the batter before baking the cake, but I have many people in our family that don't like nuts in baked goods. Besides I like the look of the cake with the pecans on top. 🙂

    There is a squirrel family living in our backyard tree. The mom is very protective of the little ones. She will run after any bird or other squirrel that will get too close to the opening of their home. Oh, and she yells. Like at me and my Hubby. Seriously! She will make this weird, angry, I-will-bite-your-head-off kind of sound. Have you ever heard a mad squirrel? It's scary. I feel like I have to walk on my tippy toes when passing the tree. I see the momma squirrel's head sticking out of the tree every morning. She is just watching..... I just hope one of these days she won't jump on my head! Eeeek!

    We love baked oatmeal and I make it quite often. My Easy Baked Oatmeal Cups are a favorite around here. I wanted to jazz it up a bit and Bruleed Oatmeal with fruit on the bottom sounded perfect. This is a great idea for a weekend breakfast when you want something nutritious yet sweet. Fruit filling is topped with cooked oatmeal and sugar topping then popped under the broiler for a few minutes. The result: delicious oatmeal that is bound to become a favorite!

    I love to serve these cookies with my Skinny Pumpkin Latte or dip them into my White Chocolate Coconut Latte.

    CHOCOLATE CHIP BISCOTTI

    They are delicate and crunchy like a real biscotti should be. These biscotti are easy to make and do not require you to dedicate a whole afternoon to it. As I said, it's enough we have been robbed of an hour already. I went with this simple version that you can easily pair with your morning coffee, cappuccino or whatever makes your cup happy. Most biscotti recipes use all white sugar. I went all light brown to imitate the chocolate chip cookie. It's like a fancied-up version of it, in a biscotti form. 🙂 Me like!

    Why You'll Love This Cake

    After these Lemon Burst Cookies, I knew I wasn't done with lemon desserts. They make you happy just by looking at them and apparently you guys agree with me. This cake is based on a simple buttermilk cake batter. I added zest from the whole lemon (it's a big cake after all) and topped it with a lemon glaze. Citrus flavor all the way!

    While the glaze is actually more tarty than sweet (some glazes taste too sweet to me), the cake is not overwhelming in flavor. In my opinion, the two complement each other really well. The crumb is light, the outside slightly crunchy.

    Happy Thanksgiving!!

    There is a lot we are thankful for this year. The big things: our love, health, home. And the small things: first steps, first words, evenings of catching our oldest daughter reading a book to her sister, sunny days in the park, playing ball with Daddy, baking cookies with Mommy, throwing leaves up in the air.... There is so much to be grateful for.

    And then there is this little blog that became a big part of our life. It brought friendships, inspiration and opportunities we wouldn't get without it. So I would like to take time and say thank you.

    Thank you to you, my sweet readers. Your comments, e-mails and messages saying that you tried my recipes and enjoyed them, that they brought some sweetness to your life - they make my days!! I have so much fun playing in the kitchen and baking up treats that I can later share on this blog. Thank you for supporting me, even if I take brakes once in a while due to life happenings. 🙂

    Happy Monday!

    How was your weekend? Did you make anything delicious? I hope you did. We are truly enjoying cooler weather, although my Hubby is wondering how long can he keep the grill going. We love BBQ! We could eat it all year long. And I know that a lot of you feel the same. So... we won't look too silly grilling even with two feet of snow on the ground. Right?

    Anyways, I think you can see I am stalling here a little bit. It's THE Monday. The CCC Monday wrap-up. I know, I know... It's sad to see it end. As the series progressed, I could see that a lot of you, my dear readers, were enjoying it more and more. All of your comments would melt my heart.     One of the easiest desserts to make are cookie bars. These peanut butter bars require only 10 minutes of prep time and are topped with a creamy peanut butter glaze. Irresistible treat! If I don't make my Flourless Peanut Butter Cookies, I make a pan of these bars and my whole family devours them.

    Wednesday - our third Blue Ribbon Challenge and a perfect treat for the last hot days of summer. Granita!

    Black Forest Semifreddo Recipe

     It's time for our second Blue Ribbon Challenge!!

    Are you excited? Did you like the theme?

    I sure did! I have to admit, it was my first time making semifreddo. Why, oh why, haven't I made this dessert before? No idea. It's no-bake, so versatile and a real treat in this hot weather. I went with my current theme, Black Forest, which is basically a cherry and chocolate combo. Can't go wrong here, if you ask me. I made my base as you would for a classic semifreddo. Eggs, sugar and cream. I added a layer of my favorite cocoa and Biscoff cookie crust and freshly chopped cherries. And..... I topped it all with my go-to cherry sauce. HEAVEN!

    Friday - my dear foodie friend, Mary, stopped by with chocolate cupcakes. Talk about starting the weekend right! Vegan chocolate cupcakes with Mary from Inside a British Mum's Kitchen.

    For all of you Downton Abbey fanatics, the book I included in Tuesday Links and Things, is one of those books you won't be able to put down. It's not necessary a recap of the show, but the unveiling of how the idea came to live and what is the historical background behind it's characters and the story itself. It's available on Amazon. Absolutely fascinating!

    Brown Butter Brown Sugar Popcorn

    It's time for this month's Improv Challenge! If you are not familiar with this event, all participants get to make a dish including two ingredients the same for everyone. July's ingredints are corn and butter. I almost skipped the challenge this month as moving my blog to WordPress is quite time-consuming. I still have the whole recipe index to move! But this popcorn was worth it!

    I have to say, it took me a loooong time to finally settle on the popcorn. I had cookies in mind for a while but this heat wave.... oh, this heat wave... I miss baking but I just can't make myself to turn the oven on! My Hubby is always there to advise me when I feel lost and popcorn was his idea. Frankly speaking, I am not a fan of popcorn. There would be different snacks I would choose before it. But this popcorn is actually pretty good! The nuttiness of brown butter is perfectly balanced by the sweetness of brown sugar. I made a big bowl for us to enjoy while watching the 1st season of Downton Abbey on DVD and it was gone before we knew it!

    Brown Butter Brown Sugar Popcorn

    Air popped popcorn with browned butter and brown sugar make for a nutty sweet treat. Perfect for a movie night!

    Ingredients

    • ¼ c popcorn popped
    • ½ c butter
    • 1 tablespoon brown sugar
    US Customary - Metric

    Instructions

    • Brown the butter in a small saucepan. Cool completely in a small bowl.
    • Add brown sugar and stir until almost dissolved.
    • Pour over your popcorn.

    I used air-popping machine to make my popcorn. I got a huge bowl full of it. It would be quite difficult for me to tell you how many cups that was, because it was disappearing fast! 🙂

    CCC Monday: Chocolate Chip Cookie Dough Balls

    I do not know what's with this project but I seemed to go from a winner to a flop.
    Last week was huge as I shared my very own recipe for Brown Butter Chocolate Chip cookies and they were a success!
    This week, I decided that I can be reasonable and comply with the weather and forget the oven. So no-bake route it was.
    Most of the no-bake cookies involve oats but I was trying to find a way to enjoy CCC without even slightly feeling like you are having an oatmeal cookie somewhere on the way. I googled the subject out.
    POOF, Joy the Baker's site pops out on the list and the Chocolate Chip Cookie Dough Balls are drawing my attention. No oats, applesauce and dipping in chocolate - I was more and more into the recipe.
    Here is the thing, I think I seriously overwhipped the butter and sugar mixture. My dough was so airy and fluffy that I had to refrigerate it in the bowl before scooping out onto a parchment paper-lined sheet. My Girls were super excited to stick the pop sticks into balls of cookie dough! Back to the freezer for the whole night.
    The next day, I was looking forward to dipping them in chocolate. It was a mess.... I could feel them melt in my hands as I was peeling the balls of the parchment paper. Still, I dipped the bottoms in the melted chocolate and called it done. I wasn't even in the mood to photograph them.

    Chocolate Chip Cookie Dough Balls

    ½ c ( 1 stick ) unsalted butter, softened
    ½ c brown sugar
    ⅓ c granulated sugar
    1 c + 2 tablespoon all-purpose flour
    ½ teaspoon baking soda
    ¾ teaspoon salt
    1 teaspoon instant coffee granules
    1 teaspoon vanilla extract
    ⅓ c applesauce
    1 c chocolate chips

    In a medium bowl, whisk together the dry ingredients ( flour, soda, salt, coffee granules ). Set aside.
    Line a cookie sheet with parchment paper. Set aside.
    In a large mixing bowl, mix together butter and sugars. Whip until light and fluffy, about 3 minutes.
    Add applesauce and vanilla extract and mix until combined.
    Stir in the dry ingredients. Fold in chocolate chips.
    If the dough is very soft, refrigerate until it hardens.
    Scoop the dough onto prepared sheet.
    Freeze 3 hours or overnight.
    Dip in melted chocolate.
    Keep in the freezer until ready to serve.
