    We are smack down in the middle of winter and the winter blues are starting to get us big time. We finally got some serious snow fall the other day.     It's National Coffee Day! You guys know by now that my Husband and I are huge coffee fans. We get up way before the kids just so we can enjoy our morning cup together. He likes his with just a light splash of half and half but preferably heavy cream and sugar. I like mine the same but I am more into experimenting with new flavors. See my recipe for homemade pumpkin pie spice coffee creamer! I know you guys love it too - thank you for letting me know!!! Recently, I started a series on Insta where I share a photo of our Sunday morning cups of coffee with a different treat alongside. Follow our #SundayMorningFor2 series on Instagram!

    Now onto the muffins! Whether you buy coffee in your favorite coffee house or brewing it in your own kitchen, you know that baked treats are a perfect side to your cup. Especially muffins. And not any muffins - jumbo bakery style muffins!!

    Since it's fall and pumpkin is on our minds (see here, here and some more here), naturally I made pumpkin muffins. While grabbing my homemade pumpkin pie spice (see the recipe here), I spotted a bar of Hershey's Special Dark chocolate. In minutes, it was chopped into chunks and added to the batter.

    Snickerdoodle Scones

    Snickerdoodle Scones - perfectly tender and sweet scones with cinnamon chips and cinnamon sugar topping.

    Ingredients

    • 2 cups all-purpose flour
    • ¼ cup granulated sugar
    • 2 teaspoons baking powder
    • ¼ teaspoon baking soda
    • ¼ teaspoon salt
    • ½ cup unsalted butter , chilled (see note)
    • ½ teaspoon vanilla extract
    • 1 large egg beaten
    • ½ cup buttermilk
    • ½ cup cinnamon chips (I used Hershey'OR 2 to 3 teaspoons ground cinnamon
    • ¼ cup granulated sugar
    • 1 Tablespoon ground cinnamon
    US Customary - Metric

    Instructions

    • Preheat the oven to 400 degrees.
    • Line two baking sheets with parchment paper. Set aside.
    • Make the topping mixture by mixing cinnamon with sugar in a small bowl. Set aside.
    • In a large mixing bowl, whisk together the dry ingredients (flour, sugar, baking powder, soda, salt and if using, cinnamon).
    • Using a large eye side of a cheese grater, grate the chilled butter straight into the bowl with dry ingredients. Cut in with a pastry cutter, until the mixture has coarse crumbs. Add cinnamon chips and stir in.
    • In a small mixing bowl, whisk together buttermilk, egg and vanilla. Add to the dry ingredients and stir in well. Do not overmix.
    • Place the dough onto a lightly floured surface. Shape into a log and divide in half.
    • Working with one half at a time, flatten the dough into a thick disk. Fold in half and then in half again. Flatten into a disk again. Fold twice again. Flatten into a ¾ inch thick disk.
    • Transfer the dough disk onto one of the prepared sheets.
    • Cut into 8 triangles. Gently, separate the scones, leaving about ½" space between them.
    • Sprinkle with the topping mixture.
    • Bake the scones for 20 to 22 minutes. The scones will come together during baking. That's okay.
    • Remove from the oven. Let sit on the sheet for 10 minutes.
    • Place the parchment paper sheet with scones on a cutting board and run the knife through the same seams in the dough to separate the scones.
    • Cool completely before serving.

    Notes

    The butter should be thoroughly chilled. I place a stick of butter in a freezer for at least one hour before grating.

    Ingredients

    • 8 oz cream cheese softened to room temperature, 1 pkg
    • ¾ cup ricotta or mascarpone cheese
    • 1 teaspoon pure vanilla extract
    • ½ cup powdered sugar sifted
    • 1 teaspoon instant coffee granules
    • 2 teaspoons unsweetened cocoa powder
    • vanilla wafers for dipping and scooping
    US Customary - Metric

    Instructions

    • In a large mixing bowl or food processor, beat cream cheese for 30 seconds until smooth and creamy.
    • Add ricotta (or mascarpone) and mix well.
    • Add powdered sugar and mix for 1 minutes.
    • Add vanilla and coffee granules. Mix well. Taste if it's sweet enough and has enough coffee flavor.
    • Scoop the dip into a serving dish. Sprinkle with cocoa powder.
    • Serve with vanilla wafers.
    • Refrigerate leftovers in a covered dish for up to 2 days.

    Christmas tree decorating in our house is a big event. There are plates of sweet treats, popcorn in few different flavors, hot chocolate and of course eggnog. While our kids have fun hanging their handmade ornaments, my Hubby and I snuggle on the couch and sip on eggnog. I love eggnog, especially with an extra dash of cloves.

    Fresh, dried - love them all. I love them baked into a sweet bread, a bundt cake, baked into cookies or simply placed on top of them. I paired them with white chocolate and dark chocolate. I also turned them into a jam and a smoothie.

    At the beginning of November, I clear out almost half of my freezer just so I can fill it with bags of cranberries. I always try to stock up for the whole year.

    Last year, about this time, I stumbled onto a recipe on Pinterest for homemade Butterfingers. My favorite candy. Next to Reese's cups. And Kit Kat. And Almond Joy. Okay, so it's not the only favorite candy of mine but it's up there in the top 5! I tried the homemade version last year and it was fantastic! Today I am sharing it's bark version on the blog.     This bark is so ridiculously easy to make, it's crazy! We are talking three ingredients that I bet you already have in your pantry. You can make this into candy bars but the bark takes significantly less time and is equally delicious!

    This recipe brings back childhood memories. It's one of my favorite fall desserts. My grandparents had an apple orchard and each fall I would visit it almost every day. I love apples! It was my favorite snack then and I would always chomp on them while studying or reading.

    Since fall is here to stay for a while and I love apple desserts, I figured it's time to share the recipe for baked apples. And this one is the very best!

    My Mom would make these fantastic baked apples every Sunday and they always disappeared so fast! Now, I make it for my kids. I also added a few of my own touches.

    Okay, okay. No one was twisting my arm here. I happily volunteered. 🙂 But it was totally their idea. They wanted pumpkin donuts with chocolate glaze. And Halloween sprinkles. Not sure what they wanted more: to cover the donuts in chocolate glaze or sprinkle the Halloween colored funfetti. Either way these had to happen.

    It's October and we are having Halloween on our minds. Just yesterday, we hung the first decor pieces. Actually, the "book stack" you see in the background - treat jar!! How cool is that? I will have more pictures of our Halloween decor soon. I am still waiting on few ordered pieces.

    Since it's officially fall, I have all of the fall flavors on my mind. All of my spices (cinnamon, nutmeg, cloves, etc.) are front row in my pantry. They are being used almost everyday. I baked a batch of these cookies on fall's first morning. It was chilly and baking a treat with cinnamon just had to happen.

    One cookie that's on my mind as soon as the leaves turn is snickerdoodle. It's are also my Hubby's favorite. I finally mastered it and it was a huge hit! Then I couldn't help myself but had to add butterscotch chips to it. Best decision ever!!

    These cookies will make you weak in your knees! They are soft yet chewy in the center. When completely cooled, they have a slightly crispy edges. The butterscotch takes them to a whole new level! It pares so incredibly well with the cinnamon coating! These should happen in your kitchen!

    Just look at this pot of gold. It makes you want to dive right in, doesn't it? But here is the deal: it's a microwave version. That is a good thing and a bad thing. Good thing: no pots to clean, no excessive stirring, in 10 minutes flat you will have a perfect caramel. Bad thing: if you are like me and LOVE caramel, you are going to make many, many jars of this sauce!

    It's fall, apples are ruling in the fruit department (and occasionally take over our kitchen counters), and we all know that apples are meant for dipping in caramel sauce. No?

    Our oldest daughter just turned eight years old. EIGHT. Wow. When did this happen? How did my little baby all of a sudden turn eight? I still remember her dragging her Winnie the Pooh stuffie (way taller than her) across the room and now she is eight and instead of Winnie, that now has his favorite spot in the corner of her bed, she carries books with her. Everywhere.

    That actually looks familiar. I was just like her when I was her age. And for years to come. Our daughter learned to read when she was 5 and it was a huge discovery in her life. All of a sudden a magical world of books and all things written opened in front of her and she never stopped being amazed. And that makes my heart happy. I've loved books my whole life too.
