Hi Cindy! The cookie dough can be frozen once scooped and formed into balls. I did not try to freeze baked cookies so I can't say how it will affect the flavor and texture.
I made these today and they DO look just like the picture. My butter had only just come to almost room temperature. Yummy and not overly spicy. My husband really felt like he needed to try two to make sure they were good enough for company. They passed! Thanks!
I made these yesterday and they are already gone. My husband says these are the best cookies he has ever had. Hard to believe, but yes, he said it. His mother would die! Kids loved them. Kids and Dad all made little ice cream sandwiches with these. A little vanilla ice cream between two of these cookies. Looks heavenly. I just ate them straight!
Hi Kim! Your comment made my day!! Thank you!! I am so happy to know you and your family loved the cookies. They are a big family favorite so to know that others love them too is wonderful. What a great idea to turn them into ice cream cookie sandwiches. Yum! Happy Holidays!
Oh my gosh! I always think I still love chocolate chip cookies the best until I bite into a ginger cookie and then I forget about chocolate chip whatever they are! 🙂 These look amazing and I can't wait to try them! Thanks for sharing!
Made these for my niece and she's so in love them. Will be making them for the christmas holidays. what is the best way to pack for mailing so they don't get stale???
Hi Bethany! THANK YOU!! I am so happy to know you love this recipe and it's even on the list of Christmas favorites! That's amazing! I have a chocolate version of these cookies coming up soon! Have a beautiful day!
I love this recipe. Always a success.
But I wonder why my cookies don't look like yours. Mine look more together instead of the beautiful cracks that it's supposed to have.
I just made mine, and they don't have the beautiful cracks either. (Sad me.) Mine turned out thin and tender. They ARE delicious though! I rated it four out of five stars only because they don't look like the pictures. However, they are delicious!

Would this work with using pumpkin pie spice instead of all the individual spices?
Anna@CrunchyCreamySweet says
Hi Allison! Sure, you can use pumpkin pie spice.

Can these be frozen
