Life is so busy recently. Almost every day, I wish the day was just a tad bit longer. There is so much on my to-do list (or should I say lists). It’s the busiest time of year for sure! And the days are shorter which makes me feel like I am constantly in a rush. When it comes to dinner time, I try to look for shortcuts that will let me get the dinner on the table in a short time yet be able to have everyone sit down to a good meal. I’ve shared our favorite dinner recipes with you before and so many of you love them! Today, I’d like to share with you my newest discovery. Enter Campbell’s Oven Sauces.
A few weeks ago, I learned about Campbell’s new line of sauces that make dinner time easy and help you create a meal that the whole family will love. My friends love them, so when Campbell’s invited me to try their Oven Sauces and create a real dinner – I immediately said yes. Being a mother of three children, I love finding products that help me get the dinner ready quick and easy. Campbell’s sauces require 5 minutes of prep, while your oven preheats. Then everything cooks together in one dish and the result is really delicious.
Just layer the chicken in a large dish and top it with diced veggies.
Next, add the sauce and pop the dish into the oven for 40 minutes. How easy is that!
Pour the sauce over chicken and veggies and spread evenly.
Bake the dish for 40 minutes.
Let stand for 10 minutes before serving.
In the meantime, you can slice a crusty bread, whip up a quick salad and set the table. The oven sauce from Campbell’s helped me created a comfort food dish that our family loved. This past Tuesday I took a break from our Italian style pasta dishes and made this slightly spicy Mexican themed pasta bake.
Long story short – I think my break from the creamy spinach pasta will be a little bit longer. This Cheesy Enchilada Pasta Bake is crazy good! It’s packed with chicken, black beans, corn and penne rigatte pasta and spiced up with enchilada sauce and a little bit of taco seasoning. It’s covered with a nice layer of cheddar cheese that melts all over the pasta during baking.

Hi Friends! How was your weekend? Gorgeous, I hope! We are having a beautiful fall here in Kansas. Usually, this time of year the winds get chilly and I do not leave the house without a sweater or even a jacket. This year, I can count the chilly sweater-days on one hand. It’s been warm and sunny. The trees are turning fast and our backyard is covered in leaves. My girls know how to appreciate nature so they have been gathering the prettiest ones and arranging them in little vases. Their brother, as a boy would, runs through the piles of leaves and throws them in the air, giggling the whole time! I love this time of year so I am trying to soak all of those moments as much as I can.
