I am a huge fan of homemade coffee creamers in lots of different flavors and this cashew creamer is the newest addition to my collection. It’s healthy and perfect to enjoy with coffee or tea!
HOW TO MAKE VEGAN COFFEE CREAMER
Most creamy sauces in vegan diet start with cashews. Same goes for the coffee creamer. You need cashew nuts soaked in water for at least 4 hours. I leave mine overnight and make the creamer in the morning. Drain and rinse the cashews and place them in a blender. Add 1/2 cup of water, brown sugar ( or sweetener of choice ) and pure vanilla OR almond extract. Blend until smooth and creamy. Add more water to reach the desired consistency. I like to use 2/3 cup in total. Store in a glass bottle with lid for up to 1 week, in your fridge. Enjoy with coffee or tea and make a homemade latter right in your kitchen!

CASHEW COFFEE CREAMER RECIPE
- 1/4 cup raw whole cashews
- 2/3 cup water
- 1 teaspoon pure vanilla extract
- 2 teaspoons packed brown sugar or sweetener of choice
- Place cashews in a glass measuring cup and cover with 1/2 cup of water. Let soak for at least 4 hours, preferably overnight. If overnight, cover with water at night and make creamer in the morning.
- Drain and rinse cashews. Place in a blender. Add 1/2 cup of water, vanilla and sweetener.
- Blend on high speed until smooth and creamy. Add the remaining water to adjust consistency, if desired.
- Store creamer in a glass bottle with lid for up to 1 week in the fridge.
The prep time does not include the soaking time.Â
