Air Fryer Roasted Potatoes is a quick and easy healthy vegetable side dish. The potatoes cook in half the time and are absolutely delicious!
These potatoes are perfect served with Parmesan Crusted Salmon (also made in the air fryer) or Crispy Tilapia.

When mashed potatoes become boring, I reach for my Easy Oven-Roasted Potatoes recipe. It's always a hit! I love roasting all the veggies. It's the best way to prepare them in my opinion. Now, I can roast them right in my air fryer! It takes half the time to cook them and they are healthy and delicious!
These Air Fryer Roasted Potatoes are very easy to make, even if you need a last-minute side dish. They are perfect served with salmon or my Instant Pot Chicken Thighs. Give your oven a break and make these quick and easy roasted potatoes in your air fryer!
How to roast potatoes in the air fryer?
- Start by peeling and chopping the potatoes. I used Russet potatoes, but yellow or even red potatoes can be used as well.
- Set your air fryer to 390 degrees F and let preheat for 4 minutes.
- In a large mixing bowl, toss chopped potatoes with one tablespoon of olive oil, salt, pepper and Italian seasoning. Place in one layer in your air fryer.
- Place basket in the air fryer and roast potatoes for 15 minutes, stopping halfway to shake them.
Air fryer vs. oven
When making roasted potatoes in the air fryer, you toss them with just one tablespoon of olive oil and roast. They won't have crispy exterior like oven-roasted potatoes for that reason. But they will cook in half the time and make for a healthy side dish.

Are these potatoes healthy?
Considering the fact, that you use only 1 tablespoon of olive oil and not ¼ cup like you would for the oven-roasted version, I would say the air fryer potatoes are healthier. You get the benefits of the vegetable without the fat. Comparing to deep fat frying, the air fryer potatoes are definitely healthy.

- 1.5 lbs potatoes
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon Italian seasoning

Our air fryer has a roast button and an air fry button. Does it matter which one I use for this recipe. My suspicion is there might not be much difference.
