    I made Air Fryer Roasted Garlic to use in this recipe and served the sauce with Lemon Garlic Tuna Cakes. It complemented them perfectly!

    Even though the name of this recipe sounds fancy, it could not be easier to make. Essentially, it's garlic mayo. But what a delicious combination! You can use is it as a dip, spread or sauce. While classic aioli is made with egg yolk, oil, garlic and lemon juice, this recipe calls for ready mayo. You can use your favorite brand or make it from scratch. Vegan mayo works great too! Roasting the garlic takes it to a new level.

    A big bowl of thick and creamy soup with a side of thick grilled cheese is total comfort food and for many, a go-to lunch or even dinner. This time, the vegetables were roasted to create the base for the soup. You may already know, I am a huge fan of roasting vegetables. The best way to bring out the flavors and deepen and enrich them is to drizzle vegetables with a little bit of olive oil, sprinkle with salt, pepper and spices of choice and roast in the oven until they start to caramelize.     It's time to bring Brussels sprouts back and in a big, delicious way! Tossed in bacon grease, spread on a baking sheet with fresh cranberries and roasted to perfection in just 20 minutes, this is a perfect side dish for  busy weeknight dinner or a holiday feast. Also, I think it looks pretty too.

    Roasting vegetables brings out their rich and deep flavor. I prefer this way of cooking them above boiling (let's not do that anymore!) and steaming.  While we grill a lot of them during summer, I always oven roast them when the weather turns chilly.

    If there is one recipe that I fondly remember from my childhood, it's my mom's roasted chicken. She would only make it on Sundays and the fragrance of the dish is still pure comfort to me. Now I make roasted chicken for my family and they love it! My Hubby always smiles when he sees me pull out chicken thighs out of the fridge. He knows dinner will be good that day. This new version features lemon and garlic combo, so perfect for Spring and Summer. The caramelized lemon slices on top add so much flavor. This dish is perfect for busy weeknights and lazy weekends.

    Lemon garlic roasted potatoes. Let that sink in for a little bit. I mean, roasted potatoes by them selves are so good! Might be just the best way to eat potatoes! But add minced garlic and lemon to the mix and these babies are irresistible! Not only they smell amazing while baking but are so easy to pop in and burst with flavor in your mouth. You have to make them!

    This side dish is helping me cut out the fries from our menu. Grabbing a bag of frozen potato fries in the store is convenient, I admit. But in effort of making better decisions when it comes to food, I am trying to find healthier options yet still quick and easy. These roasted potatoes are just that and more! They are so much better and so flavorful! Our kiddos loved them! Score!

    Sweet Rolls with Roasted Strawberries and Cream Cheese Filling

    I love to make special breakfasts for holidays. It gives you energy to enjoy the day and not just think when will the dinner be ready.

    Having three kids, I have a lot to get ready everyday - but on holidays there is just so much more.

    That's when the breakfast comes in.

    Fresh from the oven. Mmmm.

    Warm and comforting.

    So you can tackle the day happy. 🙂

    This dough is very easy to put together. We are not using yeast here so it doesn't take much time to make. It can be a little sticky, but there is no need for perfection here. Just roll it up, cut and place in a baking dish or on a cookie sheet. Bake and eat. Make the filling the day before. It takes a while to roast the strawberries.

    These rolls are so delicious! The filling is creamy and perfectly sweet. They are best served warm with a cup of coffee or tea and shared with loved ones.

    Roasted Strawberries and Cream Cheese Filling:

    8 - 10 strawberries, cleaned, hulled and sliced
    2 tablespoon olive oil or canola oil
    4 oz. ( ½ of a block ) cream cheese, softened

    Place the sliced strawberries in a baking dish. I used a 9" x 13".
    Brush with the oil.
    Roast in a 375 degree oven for about 25 - 30 minutes.
    Let cool slightly in the dish and transfer into a mixing bowl.
    Let cool completely.
    Add the cream cheese and mix until everything is smooth and combined.
    You should try it at this point to decide if you need to add any sugar or not.
    It's a matter of preference. 🙂

    Sweet Rolls:

    2 c all-purpose flour
    2 tablespoon granulated sugar
    1 tablespoon + 1 teaspoon baking powder
    ½ teaspoon salt
    ¼ c butter, cubed
    ¾ c milk

    Preheat your oven to 350 degrees. Lightly grease a 13" x 9" baking pan. Set aside.
    In a large mixing bowl, whisk together the dry ingredients ( flour, sugar, baking powder and salt ).
    Drop in the butter and using a pastry cutter - cut it in until the whole thing resembles coarse crumbs.
    Add the milk and stir everything until is comes together.
    Turn it onto a floured surface and kneed for a minute.
    Using your pan as a guide, roll the dough out into a rectangle.
    Spread with the prepared filling.
    Gently roll it up starting from the long side. Pinch the seems together.
    Cut it in half and then each half in half and so forth. It's the easiest way to cut it, but feel free to use any technique. It makes 12-15 rolls.
    Place the rolls in your baking pan. No need to crowd them - they will expand.
    Bake 13 - 15 minutes, until the tops are golden brown.
