Pulled Pork Nachos – a 4-ingredient game day or party food you won’t be able to stop eating! So easy yet crazy good!
It’s November!! First of all, how did it happen? I feel like we jumped from July to November in a blink of an eye! The weather has been gorgeous these past few days and we have been trying to soak it all up because it won’t last long. Second, this month started with a lot of excitement here. Kansas City Royals won the World Series!!! How exciting was that to watch! Stressful but very exciting! We are huge fans of baseball so this was a real treat to witness. I think they truly deserve to win.
Speaking of baseball or game days in general, let’s talk food! Appetizers or finger foods to be exact. Nachos definitely come to mind when looking for a great party food. Who can resist a platter of crispy chips loaded with all the good food and topped with melty cheese!
If you are new to this blog, you need to know that we love to combine our favorite foods into new dishes that instantly become a hit. Our extensive collection of cheesy breads is the proof. BBQ is our very favorite food so it was only natural to try to incorporate it into appetizers and have more reasons to enjoy it.
I am trying to cut down on red meat in our diet and use pork instead of beef as much as I can. Besides it’s cheaper too. Recently I was able to score gorgeous cuts of pork roast and loin which is perfect for slow cooker dishes during the cold months. BBQ pork in a crockpot cannot be easier to make. (Shh! My favorite recipe is coming this week so stay tuned!).
These nachos are for using up leftover pulled pork. I don’t think you should make pulled pork just to make nachos. Pulled pork is the best eaten in a bun, with a side of slaw and baked beans. If you make a batch and happen to have some leftover the next day but want to make something new with it – these nachos are the answer! You could also make pulled pork for BBQ sliders for a party and use some of it for nachos. Two dishes using the same ingredients – score!!
Crispy tortilla chips, smoky, sweet pulled pork, melted cheddar and a drizzle of your favorite BBQ sauce – this appetizer will rock your world! Enjoy!
- tortilla chips I used half bag
- cups about 1 and 1/2 leftover BBQ pulled pork
- 1 cups and 1/2 shredded sharp cheddar cheese
- 1/2 cup to 3/4 BBQ sauce
- Preheat oven to 400 degrees F.
- Arrange chips on a large baking sheet.
- Top with pulled pork, spreading it evenly.
- Top with shredded cheese.
- Place pan in the oven and bake until cheese melts, about 8 to 10 minutes.
- Drizzle BBQ sauce over nachos.
- Cool to room temperature and serve.
