Citrus and Berries Cake – quick and easy cake with a fabulous combination of citrus and berries!
This cake is my attempt to bring the Spring. Everywhere I look, people are demanding the end of this awful winter. Enough is enough.
I’ve heard the birds chirping the other day and thought: Alright, Spring has to be just around the corner. And then our weather guy said something about snow and a snow storm this weekend and I just wanted to throw my mixing bowl at him. I mean at the TV. Or the winter. Ugh.
Besides, the last two weeks I have been cooking a lot and baking just a tiny bit. Mostly cookies with and for my kiddos. They are sick of this winter too.
One thing I will miss about the winter is the citrus fruit for sure. I recently signed up for a service called Door to Door Organics (we will talk about it more soon). I received my first box this week and these gorgeous blood oranges were in it. I had to zest them and make a cake. Baking is my therapy and the scent of a freshly zested citrus fruit is fresh and energizing and made me thing of Spring. Besides, cake makes everything better.
This cake is sort of a transition from winter to spring. I used cranberries (yes, I have bags of them in my freezer) and blood oranges. Both a winter fruit but the citrus flavor from the zest and the fact that you can use any berries in this cake makes it great both for winter and for spring.
The base is one of my favorite quick vanilla cakes. It will rise nicely so you want to let it bake a little bit until it sets before you add the citrus slices. Otherwise they will sink in and the batter around them won’t bake properly.
Enjoy, my friends. The Spring will come eventually.
