Have you seen the newest video on our YouTube channel? It’s about one of our most popular recipes: the roasted garlic cauliflower Alfredo sauce! It’s crazy how easy this sauce is to make and how absolutely delicious it is. I make is very often and use it in many pasta recipes in place of the store bought Alfredo sauce. It’s creamy and rich yet healthy. We wanted to show you how easy it comes together and what better way than with a video. Since afterwards I had a big jar of the sauce, I put it to use and make a skinny version of my Hubby’s favorite restaurant dish: the Fettuccine Alfredo. I only had to cook the noodles. If you make the sauce ahead of time that’s a big time saver!
Just like with our Pasta Carbonara, this pasta dish is one of the easiest you can make. It’s inexpensive so if you are a student on a budget – you will love this recipe. The sauce has a ton of flavor thanks to the roasted garlic and Parmesan. You can add cooked chicken, chopped ham or simply just bacon as meat. Go ahead and add corn, peas, mushrooms or spinach and make it veggie loaded. This recipe is a perfect base for so many variations – you can make a different one every day of the week!

We love fettuccine pasta. In fact, I hardly every buy spaghetti noodles. Wider pasta grabs the sauce better so each bite is rich and full. This dish is simple yet beautiful. You can make it on a busy week night or for a special occasion, like anniversary or date night with your loved one. It’s guilt free since the sauce is based on cauliflower and not fat loaded cream and butter. If you are using gluten free pasta, remember that often GF noodles are high in carbs.
- 8 oz . fettuccine pasta uncooked
- 2 cups cauliflower sauce see notes
- 1/4 cup grated Parmesan cheese
- chopped parsley for garnish
- salt and pepper to taste
- Cook pasta according to directions on the package.
- Drain pasta. Add back to the pot, add sauce and stir together. Season to taste.
- Serve sprinkled with additional Parmesan sauce and chopped parsley.
