Zucchini Noodles with Creamy Garlic Mushroom Sauce - healthy and light lunch or dinner idea! So easy, kids can do it!
Today's post is part 2 of the series. This time the kids take over the kitchen and make one of the easiest and super healthy dishes we've ever had!
You might remember this post when we talked about the importance of face-to-face conversations in the kitchen and made the best homemade pepperoni pizza with our kids. We are talking zucchini noodles that are all the rage this year and a creamy garlic mushroom sauce made with Greek yogurt! It truly is a simple dish yet packed with flavor!
Our 8-year-old daughter loves to talk about food with us. As my Hubby and I are both very involved with this blog and our soon-to-be-live lifestyle blog and as parents that teach our kids that made from scratch meals are better for you, especially when you can make them and enjoy them with your family - it is not a surprise to us that our kids are starting to take initiative in the kitchen and create their own recipes.
It all started when our babies watched us cooking one-handed in the kitchen while held on our hip with the other hand. Then they played house with our mixing bowls and spatulas. Although that might have been playing music. Not sure - they didn't say. Anyhow, it feels like only recently they started asking to let them help with meal prep or at least setting up the table. Now our 8-year-old has her own recipe ideas and they are pretty darn good.
She simply took my Creamy Garlic Mushroom Pasta recipe and made it healthier and lighter, by swapping the pasta for zucchini "noodles" and making the sauce with a Greek yogurt. She knows that Greek yogurt is better for you than cream, yet it can make the same creamy and delicious sauce and you can slice zucchini and cook it just until tender and use in place of pasta noodles.
Zucchini Noodles with Mushroom Sauce
Ingredients
- 3 medium zucchinis
- 2 Tablespoons unsalted butter
- 2 cloves garlic minced
- 4 oz white mushrooms washed and sliced
- ½ Tablespoon all-purpose flour
- 1 cup Greek yogurt
- ½ cup milk
- salt and pepper to taste
Instructions
- Wash the zucchini. Slice lengthwise into thin (but not translucenslices.
- Place zucchini in a medium saucepan and cover with water. Cook until tender, about 10 minutes.
- Drain and set aside.
- In a large measuring cup, mix together Greek yogurt and milk.
- In a medium saucepan or medium pan, melt butter over medium heat.
- Add garlic and cook for 1 minutes, stirring often.
- Add mushrooms and cook until soft, about 3 minutes.
- Sprinkle flour over the mushrooms and cook for 1 minutes, stirring often.
- Take the pan off the heat.
- Stir in yogurt mixture.
- Serve over zucchini noodles.
