I might be one of few who are excited it’s Monday but just wait till you see what I am sharing with you today. You’ll understand.

Reason nr.1: Daffodils and tulips are blooming everywhere! That means spring is here and this cold front that’s coming today is most likely the last chapter of this year’s cold season. Most likely….

Reason nr.3: I’ve started switching our wardrobe to spring and summer clothes. It’s so much more fun than pulling out coats and scarves… I love fall clothes but this winter has been dragging forever. I am ready for spring.

Sour Cream Crumb Bars

Cook Time: 25 minutes

Total Time: 40 minutes

Sour Cream Crumb Bars that are easy to whip up and enjoy when the craving for the crunchy and creamy treat strikes. Recipe for crust and topping: CrunchyCreamySweet.com original Recipe for sour cream filling: adapted from Land O'Lakes

Ingredients

    for the crust and topping:
  1. 1/2 c unsalted butter, melted, cooled to room temperature
  2. 1/2 c light brown sugar
  3. 1 and 1/2 c all-purpose flour
  4. 1/2 tsp baking soda
  5. 1/2 tsp baking powder
  6. 1/4 tsp salt
  7. for the filling:
  8. 1 c sour cream
  9. 3/4 c granulated sugar
  10. 2 Tbsp all-purpose flour
  11. 1 egg
  12. 1 tsp vanilla extract

Instructions

  1. Prepare the 8" square pan by greasing the sides and the bottom. Line with parchment paper. Set aside.
  2. Preheat oven to 375 degrees F.
  3. for the crust and topping:
  4. In a medium mixing bowl, whisk together flour, brown sugar, soda, baking powder and salt.
  5. Add melted butter and mix until dough forms.
  6. Reserve about 3/4 c of the mixture for the topping.
  7. Press the remaining dough into prepared pan. Set aside.
  8. for the filling:
  9. Place all filling ingredients in a large mixing bowl of a stand mixer and mix until all combined.
  10. Pour over crust.
  11. Sprinkle with the topping mixture.
  12. Bake for 25 to 28 minutes or until the topping is golden brown.
  13. Cool completely in pan. Cut into squares.
  14. Refrigerate leftovers in a covered container for up to 3 days.

  1. I happen to have a huge tub of sour cream that i bought for another recipe that didnt end up getting made and now…I can use it with these. They’re beautiful and it’s nice to see S.C. rather than cream cheese getting some love!

  7. Hello, it’s middle of the night and I just baked this cake (now I’m having third piece of it ;D). The cake is incredibly easy to make but also delicious. I only changed amount of sugar- I added less but it’s still pretty sweet. And I baked it 50 minutes! Anyway thanks for this recipe! Greetings:)

  9. So I’d saved this recipe a while ago as one to try and just came back to it. I’m excited to try it and was wondering if you thought that this was a recipe where Greek yogurt might be able to be substituted for sour cream or if I should just stick to the sour cream? Thanks!

    • Hi Abby! I am so excited for you to try this recipe! Yes, you can use Greek yogurt in this recipe. Actually, it will be even better!
