Taking a little break from cookies, I decided to bring you today a classic snack idea. The kind of snack that goes well with Christmas movies, cozy blankets and a glass of red w@ne.

Caramel Popcorn. Fancied up with chocolate drizzle and a sprinkle of sea salt. Oh, and let’s make the caramel salted.

All this in 8 minutes flat. Pop the popcorn like you usually do ( air popped for me ), cook the caramel and combine it all in a brown bag. Microwave for 3 minutes. Spread on a baking sheet, drizzle with chocolate and sea salt and you are done.

I know it sounds too good to be true but it works! And it’s the best caramel popcorn we have ever had!

Sure we tried the stove top method. But after a few burnt pots and disappointments  – we gave up. So when I tried to make it the microwave style – I couldn’t believe how amazing it was! It was fast, less messy and delicious. Each piece is crunchy and perfectly coated with caramel.

Total Time: 8 minutes

Easy way to make the best caramel popcorn at home. Add a drizzle of melted chocolate and a dash of sea salt and you have one fancy and satisfying snack. Perfect for gift giving during holidays!

  1. 3/4 c unpopped corn kernels
  2. 3/4 c brown sugar
  3. 6 Tbsp unsalted butter
  4. 3 tsp corn syrup or maple syrup
  5. 1/2 tsp sea salt
  6. 1/2 tsp vanilla extract
  7. 1/2 tsp baking soda
  8. 1/2 c chocolate chips
  9. 1/2 tsp coconut oil ( optional )
  10. 1 tsp sea salt

  1. Pop the kernels. Place in a brown bag. Set aside.
  2. In a medium saucepan, combine sugar, butter, syrup, vanilla and sea salt. Cook until it boils, whisking occasionally.
  3. In the meantime, melt chocolate and coconut oil in a small microwave safe bowl or a measuring cup. Set aside.
  4. Once the caramel starts to boil, whisk constantly and cook for 5 minutes. It gives the caramel deep rich color and flavor.
  5. Take off the heat and whisk in baking soda. The mixture will foam up so be careful! Immediately pour over popcorn in the brown bar. Be careful! You are dealing with hot caramel! Fold the top to close the bag and shake few times.
  6. Place in microwave and cook for 45 seconds on HIGH. Remove from microwave and shake the bag again.
  7. Place back in microwave and cook another 45 seconds. Shake the bag again and cook one more round of 45 seconds.
  8. Pour the popcorn onto a baking sheet. Spread evenly, breaking up large pieces. Drizzle with melted chocolate and sprinkle with sea salt. Let cool.

This is the exact method that I grew up using to make caramel corn! It’s the only way to do it, if you ask me. But the extras you added sound awesome to take it over the top!

i adore caramel corn. my grandma always made it for us when we were little during the holidays. since she’s passed, we all get together and make it on Christmas day. Well now, this tops the charts for popcorn!! Caramel corn is easily one of my favorites, but when drizzled with chocolate and sea salt (!!) it instantly becomes THE favorite. I cannot resist the powers of sea salted caramel–I love thee too much to say no!

This sounds scrumptious….just wondering what the volume of popcorn is? and what size is the brown bag? small sandwich size or larger? I would like to microwave the popcorn and want to get the proportions correct….the amount of caramel and chocolate seems like a lot for one microwave size bag of popcorn.

    • CrunchyCreamySw says

Hi Patricia! I measured how much popcorn will 3/4 c of kernels give me and it comes to 17 cups. I used a brown paper grocery bag. You can always adjust the amount of caramel and chocolate to your likings. This amount of chocolate was good for drizzling. Also, the amount of caramel is enough to coat the popcorn evenly. Hope this helps and you will give it a try! Thank you!

Hello : ) this sounds delicious! A little new to all this dessert making, how should I pop the popcorn if I am just using plaim kernels and not a popcorn bag?
